Zhaotong is an important gateway for Yunnan Province to Sichuan and Guizhou provinces in history, an important channel for Central Plains culture to enter Yunnan, and one of the three cradles of Yunnan culture (Dali, Zhaotong and Kunming). The "South Silk Road" is at the crossroads, and it is known as "the key is locked in the south of Yunnan and the throat is west of Sichuan". These regional factors are reflected in Zhaotong's diet to varying degrees. Let's take a look at the delicious foods in Zhaotong by Xiaobian:

one

Zhaotong sauce

Put it in the first introduction because it has almost become a symbol of Zhaotong in Yunnan. Come to Zhaotong, and you didn't even eat Zhaotong sauce, which shows that you are too "dish". When eating baked potatoes in Zhaotong, this is an essential seasoning ~

2

apple

Because of its low latitude and high altitude, it is called "the apple closest to the sun". The existence of Zhaotong apples strongly proves that there are not only tropical fruits, but also temperate fruits in Yunnan, and the quality will never be lost to other places in the mainland! Do not believe, come and eat! Refuse to accept, to argue!

three

tall gastrodia

Zhaotong has a place called Yiliang, and Yiliang has a place called Xiaocaoba, which is the origin of gastrodia elata in the world. How good is Xiaocaoba Gastrodia elata? The data can speak: the content of gastrodin in Xiaocaoba Gastrodia elata in Yiliang ranks first in the country! According to the determination of gastrodin content in Gastrodia elata by Kunming Institute of Botany, Chinese Academy of Sciences, the result is 1.13%, which is obviously higher than that in other areas, 2.1 times that of Gastrodia elata in Hanzhong, Shaanxi, and 4 times that of Gastrodia elata in Enshi, Hubei.

For Gastrodia elata, Zhaotong people have developed many ways to eat it: stewed chicken, stewed pork, boiled hot pot, fried and steamed.

four

a kind of edible fungus found in bamboo groves in Southwest China

Seeing many mainland friends' expressions of rapture, ecstasy and ecstasy when tasting bamboo sun at high-end banquets, friends in Yunnan, especially those in Zhaotong, expressed sympathy ... In Zhaotong, this stuff is everywhere, but the key is that it is very cheap. The authentic practice of Zhaotong people is to cook it with bacon and black-bone chicken. This is not enough. For the dry goods sold in the market, Zhaotong friends who live in the countryside are not rare to eat. If they want to eat, they will pick them now!

Fresh dictyophora, the taste is absolutely different from that of dried ones sold in the market! Want to eat? It's planned: come to Zhaotong farmhouse in May and June every year when Dictyophora is on the market!

five

Oil cake

This is the oil cake from the mainland:

This is Zhaotong's oil cake:

Roasted potato

Potatoes are called potato in Yunnan, and burning potato is baking potato. It is said that potatoes have high nutritional value, which is the most grounded way to eat potatoes in China ~ Burn a potato in cold weather, spread Zhaotong sauce, or add some chili pepper noodles, bite by bite, yum, yum, and suddenly feel so warm?

seven

Yellow cake

The materials are simple: sticky rice, glutinous rice and Qiaojia brown sugar (brown sugar made from sugarcane in Qiaojia County, Zhaotong), plus Yunnan local flower leaves.

The production is complicated: firstly, sticky rice and glutinous rice are cooked in a traditional wooden retort until they are 70% or 80% mature, then rice slurry is made, poured into a big wooden basin, and mixed with Qiaojia brown sugar. Whether huang ba is delicious or not depends on this key step. After several times of stirring, the water in the rice slurry is completely absorbed by the rice balls. Then, wrap and bundle the cooked flower leaves and steam them. After a long 20 hours, huang ba is out of the pot, and the aroma transpires through the leaves of the rice dumplings.

Appearance: the color is yellow and moist, showing the crystal of rice grains, and the taste is fragrant and soft.

How to eat: steam, fry or bake after slicing.

eight

Salty stuffing takes fresh pork, winter bamboo shoots, chives, monosodium glutamate and refined salt as raw materials;

The sweet stuffing is made of white sugar, leftover oil, orange red, sweet-scented osmanthus sugar or rose sugar, sesame and so on.

However, Zhaotong people prefer to be salty.

10

Baoguba

Every season when corn is ripe, Zhaotong people use a stone mill or a machine to mash the corn, wrap it with fresh corn leaves and steam it out, which is delicious and fragrant. It is mainly eaten during the Mid-Autumn Festival and the Mid-Autumn Festival, and can also be eaten at ordinary times. The raw materials of Tongziba are japonica rice, indica rice, corn, wheat, etc. Although the raw materials are different, they all need fermentation. Fermentation methods are also different, some are made with porridge and dry materials, while others are made directly. Xiaobian's mouth is watering.

14

Huangjiang tofu pudding

Another classic food in Yanjin County. To make turmeric bean curd, the first thing is to make the familiar white water bean curd. After six procedures of soaking, grinding, boiling, filtering, solidifying and pressing, the white water bean curd is ready. After the white water bean curd is done, it is the key step: grind peanuts and turmeric into juice, boil it into a fragrant turmeric soup, scoop the white water bean curd into the turmeric soup, and boil it with low heat to get the turmeric bean curd. With reasonable nutrition, rich flavor and rich taste, rice with corn flour is a staple food worthy of promotion. Zhaotong people call corn baogu, and grind the dried baogu into baogu noodles with a stone mill, and steam the baogu noodles and water in a dumpling. This step is to play with technology. Without water and water, the corn flour rice will be very hard and difficult to eat. If there is too much water, the noodle rice will become porridge, which will affect the taste. Steamed noodle rice must bounce back, that is, it can only be eaten after being steamed for the second time: pour the steamed rice in the first time into a basket, sprinkle some cold water, then steam it with the cooked rice in another pot again, and the fragrant rice is made. Rice with corn flour and pickled cabbage and red bean soup, is it cool?

Expand all

From the general road map of Shanxi people going west, starting from the central and northern parts of Shanxi, one goes west, goes through the customs at Shahukou and enters the Mongolian grassland; One goes east, crosses Datong, and goes through Zhangjiakou to enter Mongolia.

The "west exit" in the folk's "going west" is the killing tiger exit in Youyu County, Shuozhou City, Shanxi Province. Walking out of this western exit, we will reach the areas of Guisui (collectively referred to as Guisui), Kulun and Duolun, Ulyasutai, Cobudo and Xinjiang, which were once dominated by Shanxi people. "Killing the tiger's mouth" is also an important trade route leading to Mongolia, Chaktu and Russia. The history of the rise and fall of "killing the tiger's mouth" also reflects the history of the rise and fall of Shanxi merchants. Qing Dynasty is an important period in the history of population development in China. In the early Qing Dynasty, through the restoration and development of Kang Yong III, the population of the whole country exceeded 300 million in the Qianlong Dynasty. The contradiction between man and land is sharp, and a large number of poor people in the mainland are forced by the pressure of life to "go west", "go to the East" or "go down to Southeast Asia", forming three major waves of immigration in modern times. "Going to the west" is an immigration activity in which thousands of people from Shanxi and Shaanxi have flocked to Guihuacheng, Tumote, Chahar and Erdos to make a living since the Qing Dynasty. The immigration activity of "going west" has greatly changed the social structure, economic structure and lifestyle of Mongolia outside the mouth. At the same time, Shanxi immigrants, who account for a very high proportion of immigrants, as the main carrier of cultural communication, brought Shanxi's Jin culture to the central and western regions of Inner Mongolia, forming an immigrant culture rich in Shanxi's local characteristics. As a part of farming culture, Jin culture, through population migration, merged with the local nomadic culture, formed a dynamic multicultural, and enriched the culture of China.

The barren land and frequent natural disasters in the north of Shanxi Province and the harsh living environment forced many people in the north to make a living outside their mouths. The old Shanxi ballad, "Hequ defends Dezhou, and it will not be harvested for ten years and nine years. Men go outside and women dig wild vegetables", fully shows that most people who go west are hungry people caused by natural disasters. From the third year to the fifth year of Guangxu in Qing Dynasty, there was a severe drought in Shanxi and other provinces for three years, and the most serious drought in modern times, known as the "Ding-Wu disaster", even failed to rain in some areas. The population migration caused by natural disasters is most prominent in northern Shanxi, such as Xinzhou and Yanbei. Poor land and harsh natural environment in northern Shanxi forced a large number of people to leave their homeland. For example, "Yanggao is located in the north fortress, with excellent sand moraine, high soil and yellow sand, and low soil everywhere, and it is difficult to cultivate with alkali and brine ... The land is barren and the people are poor, and there is nothing to hide. In case of famine, they are displaced." In the barren land, cold climate and harsh natural environment without stream irrigation, people in northern Shanxi live in poverty. Every time there is a disaster, people have to be displaced and go out to make a living.

"Going west" is a bitter history of immigration and a history of hard struggle and entrepreneurship. Groups of immigrants left their homes and went north to Mongolia, where they worked hard and developed Inner Mongolia. More importantly, they brought advanced farming culture to the central and western Inner Mongolia, which was in a backward nomadic state, and fundamentally changed the whole local cultural landscape. With the process of "westward migration", the Mongolian area outside the mouth has evolved from a traditional nomadic society to a diversified society with both flag and county and farming. In this evolution process, Shanxi immigrants, as the main body of immigrants, have made great contributions. Because Shanxi immigrants account for the vast majority of immigrants, the local immigrant culture is more rich in the characteristics of Jin culture, which can also be said to be the expansion of Jin culture in this area.

The flow of population has promoted the spread of culture, and the spread of culture has narrowed the distance between regions and enhanced their sense of identity. The immigration wave of "going to the west" has greatly promoted the exchanges between the central and western regions of Inner Mongolia and the mainland, further enhanced the national feelings between Mongolia and China, and had a certain positive impact on the prosperity and stability of our multi-ethnic country.
